Hillmann’s Bagels to Open in Downtown Everett

Hillmann’s Bagels to open in Downtown Everett this year.

Katherine Hillmann, owner of South Fork Baking Company, will be expanding into Downtown Everett with a new bagel shop bearing her name.

Hillmann’s Bagels will be located at 2718 Colby Ave, formerly occupied by the Strawberry Patch Cafe, which closed down last year after a long run in Downtown Everett. There was some controversy in the closure between remarks of employees, the owner, and the building owner.

Signage indicates a 2025 opening

Hopefully the building concerns about the piping and flooring have  all been “patched” up.

Hillmann’s bagels will bring a new breakfast and lunch offering to the area. South Fork Baking Company, which operates near the waterfront since 2023, has great reviews and a solid fan base.

The opening date is unknown at this point, but the signage makes it clear they plan to open by the end of the year.

Their only social media presence right now is Instagram, but no posts have been made. They do list that their bagels will be hand-shaped, kettle-boiled, and fresh baked.
