Meet The Owner – Red Rock Subs

So when’s the last time you had a pot roast sub sandwich? Yep, that’s a thing and according to Vivian Kwak, who owns Red Rock Subs it’s the most popular item on their menu.

Vivian took ownership of Red Rock Subs in March of last year. Her brother and sister-in law opened the shop in late fall of 2002 with Elaine Kwak running the shop and setting high standards for food quality and customer service. Sadly Elaine Kwak passed away in 2020.

“We wanted to keep it a family business,” Vivian told me. “We try to deliver what the customer wants.”

I asked Vivian which sub was her favorite and she said she was partial to the Club.

In addition to making subs for walk-in customers, Red Rock Subs caters to area businesses. They offer boxed lunches and include options for gluten-free, lactose-free, vegetarian and vegan.

“Great ingredients make a good sandwich,” Vivian told me.” “Freshness, no preservatives and making things from scratch are all important.”

Fresh baked cookies, hand-made salads and Stubborn sodas round out the options customers will find at Red Rock.

Like many other business owners we’ve spoken with, Vivian says it has been challenging at times to find enough help.

“It’s been hard to hire and we always have our eye out for good people,” Vivian said. “The staff here supports each other and we’re looking to add more.”

Vivian has a background in restaurant management with over twenty years experience. She’s seen Red Rock thrive over the years and admires the hard work and dedication that has gone into the business.

“Everett people have supported this store for over twenty years and we appreciate their loyalty. If its been a while, come see us, don’t forget,” She said with a smile.

Red Rock Subs is open Monday – Saturday from 10 AM – 4 PM and closed on Sundays.
