“Bite Me Cupcakes” Celebrates Grand Opening in Downtown Everett This Weekend

Bite Me Cupcakes opens at 10am Friday and Saturday at 2811 Colby Ave. in downtown Everett

After a whole lot of blood, sweat, tears and frosting Bite Me Cupcakes is celebrating its Grand Opening in downtown Everett. The store will open Friday and Saturday at 10am. They’ll be offering espresso, all natural gourmet ice-cream and of course gourmet cupcakes. This Saturday at 1pm Bite Me Cupcakes will have free samples of all natural gourmet ice cream along with gourmet cupcakes, breads and more. Owned by husband and wife Jason and Kim, Bite Me Cupcakes originally opened in Snohomish in October 2010. The shop moved to Everett Mall in February of 2012.

Earlier this year they were approached by Craig Skotdal of Skotdal Real Estate who had a retail space open up on Colby Avenue after Crusty Tatsy Bakery closed. After seeing the space, the couple decided it was exactly the spot they had been looking for. “We wanted a place that was family friendly,” said Kim. “With the Imagine Children’s Museum, YMCA and Village Theatre KIDSTAGE all in the neighborhood we found the perfect place to deliver our brand of happiness.”

After the grand opening this weekend, “Bite Me” will be open Monday – Friday 7am – 7pm and Saturdays from 9am – 6pm. They will be closed on Sundays. In addition to the store, “Bite Me” also has a converted school bus that allows them to take their cupcakes on the road and can be seen at community events all over Everett and Snohomish County. They offer delivery and online ordering as well as catering and special events. The menu varies and all of the cupcakes are baked fresh daily. They also will create custom flavors. “If you can think of it, we’ll find a way to do it,” said Kim.
